People tend to barbecue chicken very quickly when grilling it. However, if you cook chicken for a longer period of time over a lower heat, you will end up with very moist chicken. Cooking your chicken between 235 and 250 degrees, for 45 minutes to an hour is recommended. Boneless chicken should have an internal temperature of 170 degrees and bone-in chicken should have an internal temperature of 180 degrees.
If you are grilling the chicken as suggested above, low and slow do not add barbecue sauce till you are done cooking. When you use marinades while grilling they drip down and often cause flames, which cook the chicken at a faster rate.
How to Grill The Perfect Steak
Cooking steak offers you a little more freedom than chicken does. When learning how to grill the perfect steak you can decide whether you want to eat it rare, medium rare, medium well or well done. The choice is completely up to you! If you are cooking for other people, it is always nice to ask them how they like their steak cooked.
When cooking steak it is best to allow the steak to come to room temperature before grilling. If there is any visible fat on the steak, make sure to trim that off. You can get really creative with seasoning your steak or you can use something simple like olive oil, fresh pepper and a little salt.
Temperature for steak are as follows:
- Rare: 130 to 140 degrees.
- Medium Rare: 145 degrees.
- Medium: 160 degrees.
- Well Done: 170 degrees.
