Stuffed Green Peppers Casserole

Stuffed Pepper Casserole is the best mix of stuffed peppers and a 1 dish casserole! it is easy to make and is simple ingredients of -beef - tomato sauce - bell peppers - rice and more!

This is my husbands all time favorite stuffed green peppers casserole dish.  I love it too because it is easy to make and really good.  The key to this recipe is to layer the casserole like a lasagna.  It makes the peppers soft and very easy to make.  It also lets the peppers absorb the flavors of the other items so it tastes really good when you’re done cooking it.

Stuffed Green Peppers Casserole

Ingredients

1 lb Ground beef or turkey
2 Tbs chopped onion
1 1/2 cups rice
1 tsp salt
1/4 tsp garlic powder
2 15 oz cans tomato sauce
3 medium green bell peppers – tops cut off and reserved; seeds removed and sliced

Instructions

1. Preheat oven to 350 degrees
2. Cut tops off peppers and take out center stems. Chop remaining top to add to meat mixture.
3. Brown meat, onion and chopped pepper tops in skillet.
4. Drain fat.
5. Stir in rice, salt, garlic powder, and 1 can of tomato sauce.
6. Spray 9x9x3 pan with cooking spray and line bottom with 1/2 of the sliced peppers
7. Scoop 1/2 meat mixture into the pan
8. Make another row of the rest of the stuffed peppers
9. Add the remaining mixture on top of the peppers
10. Pour the second can of tomato sauce over the mixture
11. Cover with foil and Bake for 45 minutes
12. Uncover and cook for another 10 mins
13. remove from oven and serve

  • 1 tsp salt
  • 1/4 tsp garlic powder
  • 2 cans tomato sauce 15 oz
  • 3 medium green bell peppers tops cut off and reserved; seeds removed and sliced

  • Preheat oven to 350 degrees

  • Brown meat, onion and chopped pepper tops in skillet.
  • Drain fat.
  • Stir in rice, salt, garlic powder, and 1 can of tomato sauce.
  • Spray 9x9x3 pan with cooking pray and line bottom with 1/2 of the sliced peppers
  • Scoop 1/2 meat mixture into pan
  • Make another row of the rest of the stuffed peppers
  • Add remaining mixture on top of the peppers
  • Pour the second can of tomato sauce over the mixture
  • Cover with foil and Bake for 45 minutes
  • Uncover and cook for another 10 mins
  • remove from oven and serve

  1. are you sure 9x9x3 inch dish? or 9x13x3?

    1. I made it in a 9x9x3. But if you want a thinner layer you could use a larger pan.

    Kinda frustrated that you didn’t note the rice needed to be cooked before being put in the oven….I’m new to casseroles and now it’s ruined 👌

    1. Sorry, you’re having trouble. My rice was not cooked when I put it in. It soaks up the liquid and cooks while it is covered with the foil. It naturally steams the rice. Hope that helps!
